This is a delicious recipe from Donal skehan's cookbook: good mood food.these cupcakes are
easy to make and are very tasty.
ingredients
175g self raising flour
110g caster sugar
110g margarine or butter
50ml milk or water
50g chocolate chips
2 tablespoons of cocoa powder
2 large eggs
1 teaspoon of baking powder
for the Oreo cream frosting
250 ml of fresh cream
25g icing sugar
1/2 teaspoon of vanilla extract
8 Oreo cookies crushed and 8 to decorate.
1. preheat the oven to 180 c gas mark 4 and line cupcake tray with paper cases
2.in a large bowl combine all the ingredients except for the chocolate chips, make well in the centre of the bowl,break in the two eggs and add the butter, using an electric hand mixer beat all the ingredients together until combined.you are looking for the batter to be light and creamy.add the rest of the liquid in stages required.stir through the chocolate chips.
divide the batter evenly in the paper cases and place in the oven for 15-20 minutes or until firm and light brown on top.
3.allow to cool on a wire rack before applying the Oreo cream frosting.
4.for the Oreo frosting simply beat the cream,vanilla extract and icing sugar until it becomes thick.gently fold in the Oreo cookie crumbles and spoon the mixture into an icing bag with a large round nozzle.squeeze the Oreo frosting onto the cupcake and top with broken cookies.
